Jelly “Mirror”

Jelly “Mirror” Ideal Transparent 😘🥂🍾 Jelly one of
the main traditional new dishes! It is usually served on a large

elegant dish scatters instantly on the plates!

Ingredients:
1 pork leg
1 pork knuckle
400g beef tenderloin
1 pc carrot
1 pc onion
6 cloves of garlic
1 tsp salt
2 bay leaves
1 tsp black pepper
3 eggs
3 sprigs of dill

Cooking:
Meat should be kept for about 2-3 hours in water, ideally, all night. This stage is very important and should not be ignored, since this is how meat is cleansed from blood. After that, the meat must be washed and cut into pieces.
Put all the meat in a large saucepan and pour 3 liters of water. The water should cover the meat 5-7 cm. Put the pot on the stove and bring to a boil. Important! For 5 minutes you need to collect foam with a spoon.
Reduce heat to minimum so that the broth no longer boils. Add 1 peeled onion, carrots, 3 cloves of garlic, 2 bay leaves, 1 tsp to the pan. black pepper and 1 tsp salt, carrots will give the broth a beautiful golden color. Continue cooking the jelly for 4-5 hours, during this time it is necessary to mix the broth with the meat several times, while the water can not be added!
Turn off the heat, take the meat into a bowl, throw the vegetables away and add 3 cloves of garlic (crushed) into the broth. Stir the broth and strain. The cooled meat must be separated from the bones and chopped.
Now it is necessary to remove excess fat from the broth. Use a napkin for this: the napkin will immediately absorb excess fat. Repeat this technique several times. Then in the broth, you can add a little salt and black pepper to taste.
Boil eggs, cool, peel and cut into thin slices. To serve aspic in the original way, use small molds (for example, molds for cupcakes). At the bottom of each mold, place one slice of egg, then spread the meat into the molds. Pour the meat with broth. Cool down aspic and then refrigerate overnight. As soon as jelly hardens, it must be carefully removed from the molds and garnished with dill.
